Preheat oven to 425 degrees.
Slice 3 pounds of potatoes into discs about 1/2 inch thick, then stack the discs and slice into 1/2 inch thick sticks.
Arrange potatoes on a parchment lined baking sheet and season with salt, black pepper, chili powder, garlic powder, herbs (optional), and olive oil.
Toss to coat evenly and bake at 425 degrees for about 30-35 minutes.
If you like your fries golden but not crisp, 25-30 minutes is usually a good window. If, like me, you like your fries crispy, 30-35 minutes is about perfect.
You don’t have to stir, flip, or do anything else.
Serve fries while they are hot and fresh out of the oven – with ketchup or your favorite dipping sauce, of course!
