Now THIS is a dinner time side dish: Super Simple Oven Baked French Fries! EASY. ONE PAN. No need to stir it or mess with it.
Just pop it in the oven and set the timer!
As a super, super busy mom of 2, this is a weeknight dinner MUST. It’s also a MUST when a certain 7-year-old boy named Max comes pouncing off the school bus mid-afternoon, smiling and joyful, and always about to utter the trigger phrase that all moms hear 119 times a day when you have boys:
“Mooommm, what’s there to eat?”
Oohhhh yes, I get asked this question by Mr. Vegan Max at least that many times a day. Seriously, come over to my house and count!
And when I say “ok, hold on just a minute” and I get distracted, I oftentimes find him having helped himself to a whole green pepper or cucumber – or a bowl full of spinach leaves – curled up in his cozy bed.
And these Super Simple Oven Baked French Fries? They are his FAVE.
Side note: I should start a vegetable farm. Not garden – farm!
So eeennnnyyywayy, let’s get right to it and I’ll show you my perfect, fuss-free method of making these golden delicious fries for your own hungry bunch!
Just slice up about 3 pounds of any white potatoes. The easiest way to do this is to first slice the potatoes into discs about 1/2 inch thick, then stack the discs and slice into 1/2 inch thick sticks.
This is the perfect size to get both crispiness but also a nice, potato-ey bite.
I used russet potatoes this time but I use yellow, gold, and white potatoes regularly.
Heck, if you have ANY potatoes, this recipe should work. I mean, a potatoes a potato right? 🙂
Arrange potatoes on a parchment lined baking sheet and season with salt, black pepper, chili powder, garlic powder, herbs (optional), and olive oil.
Toss to coat evenly and bake at 425 degrees for about 30-35 minutes. This slightly depends on how crispy you want your fries.
If you like them golden but not crisp, 25-30 minutes is usually a good window.
If, like me, you like your fries crispy, 30-35 minutes is about perfect.
You don’t have to stir, flip, or do anything else.
And that’s absolutely it! I mean, that couldn’t have been easier, right?
Serve fries while they are hot and fresh out of the oven – with ketchup or your favorite dipping sauce, of course!
June helped me make the cute cone-shaped fry holders out of parchment paper. Fun to mix it up and hey – no dishes!

- 1/2-3/4 tsp. salt to taste
- 1/4 tsp. black pepper
- 1 tsp. chili powder
- 1/2 tsp. garlic powder
- 1/2 tsp. dried herbs (optional) such as rosemary, thyme, Italian seasoning, oregano
