Off to the kitchen I go but – oh boy! Time is NOT on my side!
I mean, I feel almost certain you’d be shocked to find out it took me 2 weeks to perfect the logo for this here heavenly meeting-place of food…and another 2 hours to get the lovely shades of mountainy blue you’ll see popping up here and there to correlate with said logo….but that’s neither here nor there!
So to keep things nice and easy I thought I’d toss together one of my favorite recipes and have it atop a luscious slice of whole grain toast with a touch of Earth Balance butter. So warm and melty, gotta love it.

No matter how much my kids hate to hear it, fruit is nature’s candy and when it’s sweet, juicy, and packed full of vitamins and good vibes, who would want to skip getting in an extra serving of fruit whenever they can?!
While it’s still a tad bit chilly out there, take advantage of staying toasty warm via your oven, and set it to 400 degrees.
Start by slicing all of your apples (give them a quick soak in some lemony water if you want to avoid them browning quickly, but since we’re baking this bad boy up, it’s not really necessary).
Next, just toss them with your cranberries in some cinnamon, nutmeg, maple syrup, a pinch of salt, and just a teeny tiny bit of coconut oil.
Spread your mixture in a single layer on a baking sheet and pop it in the oven! It will immediately make your house smell PHENOMENAL. So warm and inviting!
You can eat this fruit topping all by itself, put it atop your toast in the morning like I am, or add it to a bowl of coconut yogurt for a yummy snack!
Definitely no shortage of possibilities!

Effortless Spiced Apple and Cranberry Topping
- 6-8 small baking apples
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp melted coconut oil
- 1 c fresh cranberries
- pinch of salt
- 1 tbsp lemon juice (optional)
Preheat your oven to 400 degrees.
Slice your apples into 1/2 inch slices and toss in lemon juice to prevent browning (optional).
Combine apples, cranberries, and all remaining ingredients and toss until well coated.
Spread evenly on a baking sheet, optionally lined with parchment paper.
Bake at 400 degrees for about 20 minutes, or until fruit is done to your liking.
