Crispy Chickpea Snacks 2 Ways

I am forever in search of easy, quick, healthy, and FILLING snacks that not only I love, but my kids will love, too.

The thing I adore about this snack is that essentially all you need is a can or two of chickpeas, and who doesn’t have those sitting around the pantry?

This snack is crunchy, a little chewy, super flavorful, and bursting with nutrients, protein, fiber, and a waist-friendly amount of calories!

Crispy Chickpea Snacks to the rescue!

Are you sold yet? Me too! So let’s preheat our ovens and get to work!

Firstly and foremostly (hey, those could be words), open two 15 oz. cans of chickpeas or garbanzo beans, and give them a good rinse under cold water.

Next, use a clean kitchen towel to make sure your chickpeas are as dry as possible.

Arrange them on a baking sheet and sprinkle with salt. Drizzle with 1.5 tbsp. of your favorite oil. Olive oil works like a charm, but for this recipe I decided to try some hazelnut oil that I had sitting around. Yum!

Just give it a little drizzle and toss everything together.

We won’t worry about the spices just yet.

Bake your chickpeas in a 400 degree oven for 25-30 minutes, stirring about every 10 minutes.

Once they are done, they’ll be nice, hot, and crunchy!

While your chickpeas are roasting away, let’s mix together our seasonings.

For one option, I tried a moroccan-inspired combination of fresh mint, lemon zest, cumin, and garlic powder.

Another thing I love is a bit of spice with my chickpeas, so I also did some with chili powder, chili flakes, oregano, and garlic.

Just mix the spices together and toss with your chickpeas when they are hot and fresh out of the oven.

If you want to stick with just one spice mix for your snacks, double up on the amount you use from the recipe below.

I would love to go on for a while and tell you all the awesome tricks I used to get these guys perfect, but this is honestly it!

Crispy Chickpea Snacks 2 Ways

Ingredients

  • 2 15 oz cans chickpeas, rinsed and dried
  • 1.5 tbsp olive oil

Moroccan Seasoning

  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/2 tsp lemon zest
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • 1 tbsp fresh mint, chopped

Spicy Seasoning

  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/8 tsp red chili flakes
  • 1/4 tsp chili powder
  • 1/8 tsp oregano
  • dash of cayenne pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Drain 2 cans of chickpeas into a colander and rinse well with cold water.
  3. Pat chickpeas dry and arrange on a baking sheet.
  4. Drizzle with olive oil and a sprinkle of salt and bake for 25-30 minutes, stirring about every 10 minutes.

  5. Mix your spice blends in 2 separate dishes.
  6. As soon as chickpeas are done, toss half in one seasoning, and the other half in the other seasoning.
  7. Serve immediately and enjoy!
