Desserts like these Baked Apple Crisps are pretty much the only thing I love about cold winter weather. So thank God it’s starting to warm up out there!

What a cozy feeling to indulge in this dessert. And, if it looks hella cute while you’re doing it….well, why not!

With only a handful of ingredients (most you probably already have!) I’ll show you how these ridiculously easy Baked Apple Crisp Desserts come together!

These fanciful treats are topped with coconut whipped cream and it’s a truly decadent way to finish things off.The first thing you are going to do is pre-heat your oven to 400 degrees while you prep your apples.

You can use any kind of baking apple that you like. Granny Smith? Honeycrisp? Rome? Those will all be great! I used a mix of Golden Delicious and Honeycrisp apples which I needed to use up.

Give them a good wash, then turn each apple onto its side and use a sharp knife to cut off the top ¼. This gives you access to the inside of your apple, and makes for a really, really cute top once your apples are done!

Rub each exposed side of your apple with lemon or lime juice to prevent your apples from browning. Then, use a spoon to scoop out the core of each apple.

You can throw the core away.

Next, scoop out the inside of each apple, leaving a nice shell to re-stuff. Save your scooped apple bits for the filling.

Rub each apple inside with lemon or lime juice if you like, and toss your scooped apples in a little lime juice as well.

Arrange your hollowed out apples and tops on a baking sheet and sprinkle lightly with kosher salt.

Bake your apples for about 15-20 minutes, until they are about halfway done. They should still be firm, but starting to wrinkle on the outside.

While you wait for your apples to bake, let’s get the other components of this dessert together!

For the ooey, gooey, delicious coconut caramel sauce, all you have to do is heat ¼ cup of coconut sugar with 2 tbsp. of water over medium heat, until it just starts to simmer. Remove from heat and reserve.

You’ll use half of this sauce in your filling, and the other half to drizzle over your finished apples.

For your oat crumble, combine your oats, flour, coconut oil, coconut sugar, cinnamon, and nutmeg. Whisk together and set aside.

In a large mixing bowl, combine your scooped apples, oat crumble mixture, and half of your coconut caramel sauce. Mix until well combined.

When you take your apples out of the oven, allow them to cool slightly so you can handle them.

Fill each apple generously with your delectable blend of apples, oats, and spices, and place your apples back on your baking sheet.

Yes, leave the tops on your baking sheet as well.

Return everything to the oven for another 15-20 minutes, until your apples are soft, your filling is bubbly, and you can’t wait another minute to take a bite!

When you take your Baked Apple Crisps out of the oven, cool them for a minute or two before serving.

I ate 2 of these for breakfast, and my daughter ate one for breakfast and another one for lunch! And the rest got gobbled up before I could go for thirds. Should have made more!!

Baked Apple Crisp Desserts!

Ingredients

  • 6 baking apples
  • 1/2 c oats
  • 1 tbsp melted coconut oil
  • 1/4 c + 2 tbsp coconut sugar, divided
  • 1 tsp cinnamon
  • pinch of nutmeg
  • pinch of salt
  • 1 c coconut whipped cream

Instructions

  1. Preheat your oven to 400 degrees.
  2. Wash and dry apples.
  3. Using a sharp knife, place each apple on its side and cut off the top 1/4 of each apple, to create a removable "top".

  4. Use a spoon to scoop out and discard each core.
  5. Rub all exposed sides of your apples with lime or lemon juice to prevent browning.
  6. Scoop out the inside of each apple, toss in lemon or lime juice, and reserve.
  7. Bake apples for about 15-30 minutes, until partially cooked.
  8. In a saucepan, combine 1/4 c. coconut sugar and 2 tbsp. water and simmer over medium heat until thickened. Reserve.
  9. In a small dish, combine your oats, 2 tbsp. coconut sugar, cinnamon, nutmeg and combine well.
  10. In a large bowl, combine apples, oat mixture, and 1/2 of your coconut caramel sauce. Mix well.
  11. When apples come out of the oven, allow to cool slightly so you can handle them.
  12. Generously fill each apple with your filling.
  13. Return to the oven (tops too) and bake for another 15-20 minutes, until apples are done and everything is hot and bubbly.
  14. Top with coconut whipped cream and enjoy!
